Waterbury's Reservoir Brings Local Fare and Craft Beer to Vermont Residents

In a world overflowing with chains, one locally owned restaurant is standing tall and proud, holding its own against the steady stream of cookie cutter eateries. Waterbury Reservoir, located in Waterbury, Vermont, is a 99-seat restaurant that is currently open for dinner seven days a week, with lunch being served on Saturday and Sunday. They're self-proclaimed experts in Vermont comfort food and are the current boasters of the state's largest selection of craft beers- 39 different options, to be exact.

From a food perspective, we pride ourselves on using fresh and, if possible, local ingredients," explains Mark Frier, Co-Owner of Waterbury Reservoir. "As far as drink, we have the most draft beers in Vermont with a focus on beers from our state. We have some of the highest ranking beers in the world available every day, breweries like The Alchemist and Hill Farmstead."

A standout for the restaurant is the split between a bar feeling and a restaurant-like eatery, perfect for those with kids or those with rowdy groups. "The front is more restaurant, the back is more bar," explains Frier. "We have a patio for summer dining. We also do music on Saturdays in the winter and sporadically in the summer."

An additional private room allows for private parties, events, and rehearsal dinners. The 1200 square foot space holds up to 50 people for intimate gatherings and is complete with a private bar and bathroom, high definition projector for special productions, and a rustic, yet modern, setting. A private, Chef-crafted menu is also available for these special events.

In the third floor of the building, the Reservoir is busy toiling away, brewing its own craft beer under the name of Big Tree. There are twenty-five additional Vermont breweries represented behind the bar of the Waterbury Reservoir as well. When it comes to the food, they've been getting noticed, thanks in part to their use of fresh ingredients. "We have been recognized by Vermont Fresh Food Network for our use of local Vermont ingredients in our food," Frier details.

Location is another selling point for dining at Waterbury Reservoir. "We are located in the center of downtown Waterbury Vermont," Frier announces. "We are very close to Ben and Jerry's and the town is situated to be an amazing jumping off point to all the recreation in Vermont."
