Thyme 2 Dine Is Perfect For Those With No Time To Cook

Working in the restaurant industry can be an extremely taxing experience. Just ask Larry Cornblatt. He's the Stowe-based personal chef behind Thyme 2 Dine, the business he founded after four years of owning, managing, and serving as head chef of his own restaurant burnt him out career-wise.

"I was a single dad working way too many hours and not making enough money," he said. "I love to cook, but running a restaurant was getting to be too much. While it was a great experience and provided many lasting friendships and memories, it was proving to be enough stress for a lifetime. In April of 2002 I made the difficult decision to close with the thought of starting a new business."

While working part-time for a few restaurants and running Waterbury's Meals on Wheels program, Cornblatt decided to offer catering services to the Stowe area on the side. What began as cooking meals for Vermont vacationers has now grown into a full-service business; Cornblatt does it all from catering to events of all sizes to leading cooking lessons for participants of all ages. He can travel across the state and beyond, and can easily accommodate clients with dietary restrictions. Considering he learned to cook as a child and has over 30 years of experience in the food industry, there's virtually no limit to the cuisine he creates.

"I have a diverse culinary background, specializing in health conscious and multi-ethnic menus using locally sourced, Vermont produced, and organic ingredients when available," he said. "From simple comfort foods to gourmet cuisine, I offer a variety of foods including Asian fusion, Italian, Mexican, Mediterranean, French, American, and BBQ."

Cornblatt takes advantage of the freshest, locally grown and raised ingredients whenever possible, and loves experimenting with flavors and various styles of cooking. He cites his beef tenderloin with shiitake bourbon sauce, garlic cheddar mashed potatoes, and maple ginger carrots and rack of lamb served with raspberry mint demi-glace, lobster risotto, and roasted Brussels sprouts as two customer favorites.

Some of Thyme 2 Dine's services include custom weekly meal plans, freezer meals, meals for intimate, romantic dinners or a small group, and more. For parties and smaller events, Cornblatt does all of the planning, shopping, meal prep, and will even clean up after himself. He still cooks for returning vacationers, many of them repeat customers that have used his services for years.

Cornblatt also teaches cooking to individuals and small groups, from beginners to more advanced foodies. They can be done in the privacy of one's home and include everything from food safety and other kitchen basics to making a complete gourmet meal.

"All lessons are custom designed and geared towards the student's individual goals and skills," he said. "Some example lessons might be kitchen safety & knife skills, soups & sauces, pizzas and flatbreads, sautéing, grilling, cooking for parties, international cooking, cooking for a new diet, or learning to prepare healthy adaptations of your favorite recipes."

Cornblatt stresses that Thyme 2 Dine is a highly personalized service, and always creates meals with the customer in mind. He likens his business to a restaurant that comes to the client.

"I am cooking for YOU with YOUR needs in mind," he said. "Menus are developed with your input and recipes are adapted to suit your individual tastes and dietary requirements."
