Specialty and Heritage-inspired Baked Goods Made To Order At Big Eyes Bakery

Big Eyes Bakery is a retirement vision for married couple Paul Faenza and his wife Brigid. After long and successful careers with the New York City Police Department, the couple retired and Brigid started selling her baked goods at local farmer's markets in Ludlow, VT. They built a separate kitchen in their new home and spent eight years selling to local markets.

In 2014, the couple opened Big Eyes Bakery, borrowing from Brigid's nickname Big Eyes from her aunt. In 2016, the couple moved into a larger space to accommodate for their growing customer base. Every baked good is made to order, so having a kitchen that fit their needs was essential.

"All [of] our cakes are made from scratch," Faenza said. "We offer gluten free as well. I do the decorating and is always willing to take on a challenge."

Big Eyes Bakery crafts cakes, cheesecakes and cupcakes for any occasion. In addition to that, they offer tarts, dessert bars, cookies, meringues, pies and breads. The bakery also has a menu of desserts that celebrate the Faenza's Irish and Italian backgrounds.

In fact, Faenza said one of the bakery's most popular items is the Irish soda bread. The couple uses Brigid's 100-year-old family recipe. To honor the Italian in their heritage, customers will find cannolis, Venetian cookies, pignolias and more.

Customers are encouraged to bring their own ideas to Big Eyes Bakery, too. The Faenzas are happy to create any specialty from a client's background, much like the couple does for their own.

They also create custom specialty cakes for special occasions. Clients can pick from chocolate, vanilla or lemon cake paired with either chocolate or white butter cream frosting. Big Eyes Bakery also has a selection of specialty cake flavors: carrot, Guinness, Bailey's Irish cream and red velvet, to name just a few. Clients can choose to add raspberry, strawberry, chocolate and vanilla fillings. The duo will also provide custom decoration. They'll even do photo cakes too
