Evil Bake Shop Crafts Cake Pops for Special Occasions with Custom Creative Designs

What started as a baking experiment to offer her husband something different for his birthday eventually became a side career for Liisa Reimann, owner of Evil Bake Shop in Burlington, VT. Reimann ended up making her husband an ice cream cake, but had a little extra fun with the leftovers.

"I created a chocolate liner, filled it with ice cream and other yummies, and lo, the ice cream cupcake was born," Reimann said. "My husband and kids loved the cupcakes so much (more than the cake even) and told me I should sell it, and that's what started [Evil Bake Shop]."

Reimann then turned to cake pops, which are easier to store and ship. Evil Bake Shop offers an assortment of cake pops, mini bite-sized pieces of cake stuck to a stick for a fun, decorative and easy-to-eat dessert. The company earned its name from the person who serves as taste tester, who called the cake pops "positively evil" upon the first bite. Reimann said cake pops was a great business venture for her, a person who can never eat more than a bite or two of traditional cake.

"A cake pop?is two or three bites only?[and] that's all we really need when we have a treat," Reimann said. "[Just] a few decadent bites. And they bring people so much joy. That's the best part."

Reimann's favorite cake pops are vanilla. It's classic and what she calls her "go-to" in the kitchen. Her vanilla is made with high quality bourbon vanilla extract for a full-bodied vanilla flavor in the cake that isn't bland. Evil Bake Shop's chocolate cake is what Reimann calls "really dark and sultry." Coconut is another favorite.

Cake pops can be designed in any way. In fact, for the last presidential election, Reimann crafted a Bernie Sanders cake pop, made with maple walnut cake. In fact, Reimann said no client has to pick just one design. There can be several designs in one cake pop order.

"My absolute favorite pops to make are Minions," Reimann said of the character from the Despicable Me movie franchise. "To have a counter full of all the different characters, you can just hear the funny little voices when they're all lined up in front of you. I have so much fun in the kitchen. I don't think I've ever laughed so much."
